Why a kitchen buys from the farm instead of the mandi

Between a field in Okara and a restaurant in Gulberg there are normally three margins: the commission agent, the wholesaler and the supplier who delivers. We are the field and the delivery van, and nothing else.

  1. We grade before it leaves

    Every sack is sorted to a size band, washed and cured. You get the same size potato in December that you got in September, so your fry times do not move.

  2. It goes on the van that night

    Orders placed by 9:00 pm for next-morning delivery. Loaded overnight, delivered into your store before service.

  3. You settle after you check it

    Open the sack at the door. Cash, transfer, or monthly account terms once we have run three clean deliveries together.

What is the minimum order for restaurant supply?

Fifty kilos for most of Lahore, which is roughly two sacks. Bahria Town, the Walled City and out-of-city areas start at 100 kg.

Which potato is best for french fries in Pakistan?

A large, uniform potato with high dry matter. Size consistency matters more than size alone, because a sack holding both 40 mm and 70 mm potatoes cannot be fried to a single timing. Our Restaurant Grade A is sorted to a 55–75 mm band for fry stations.

How many kilos of raw potato make a kilo of french fries?

About 1.65 kg, because peeling and trimming removes 35 to 40 percent. Cost your fries against that number rather than the sack price, and add your prep labour on top.

Why are our french fries coming out dark?

Nearly always cold storage. Below about 6 degrees a potato converts its starch to sugar, and the sugar caramelises in the fryer. Move sacks out of the chiller to a dark store at 8 to 12 degrees and the colour recovers within a week or two.
